Server Needs Rebooting Every Monday?

I have a Windows 2008 x64 R2 server 32GB of Memory. Dell R700 SAS drives

Roles: PDC, DNS, File Services, RDS, IIS

Backup software: StorageCraft

AV: BitDefender

Sql 2005

This server has an average of 7 days of uptime. During the week things are fine and memory is not being maxed.

I've been dealing with this issue for a month now. In Server Administrator - I saw my PERC controller needed a firmware update. I opened a ticket with Dell and proceeded to get the correct firmware - updated it. Hoping this would help with hard drive caching.

I say hard drive caching because my disks in perfmon on Monday are maxed out. My Sql server is allotted 25GB of Memory for a heavy application - which is maxed out - while during the week its only at 15GB~ on average.

Mondays are also a day of rest for our office allowing me to do maintenance on the machines. No one is here. But if someone comes in and uses our main application - I get a phone call informing me the server is botched.

I've checked to make sure its not a backup issue - no backups run on Mondays.

I'm upgrading MSSQL 2005 to 2008 this weekend - I highly doubt this will solve my issue. Who knows...

So far, only a reboot clears my issue up. I would really like for this to go away and bounce my server once a month vs every week.
