planning a complete 2012 server upgrade for a small company

I am planning a complete server upgrade for a small company of 50 plus users, and I am looking for advise as to my plan I think mine simple yet gives them good backup fail over.

Current Env:

Windows 2008 DC running in a VM with one more VM running on top of host claims to be print server

Windows 2000 Server/ Exchange 2000

Windows 2000 Server ( not 100 % sure of its functions other maybe a file server no documentation. Also listed as domain controller,

my Plan:

The Exchange Server 2000 and Windows 2000 Servers are end of life and is a huge security risk.

Bring in a tall Computer rack, along with at a minimum of two new rack computers (2 -4 ) CPU, 8 - 16 GB RAM, running Windows 2012.

Server #1 I would build / migrate to a new primary Domain Controller, with a VM instance of a backup Exchange 2013.

Create new group policies based on departments and their needs instead of policy to fit all.

Server #2 I would install a new MS Exchange 2013 server, with a VM instance of their backup domain controller.

Export their mail boxes from Exchange 2000 and import them into the users new Exchange 2013 accounts.

Old Windows 2008 Domain controller server would get reused as a file server / backup server.
