Should I blow it all up?

So I recently got a new job at a medium sized church as their IT director and have already implemented spiceworks and its been great!

But I have a much bigger problem.  They have never had an actual IT staff member so everything is a mess.  They currently are on server 2008 r2 and exchange 2007 on the same physical server. 

The server is a mess... its awful.  Most of the computers in the network arn't even joined to the domain. So things like security groups and file share permissions are totally messed up and I want to redo all of it. So I am trying to decide if I should spend the time cleaning up the current server, or try and export the important data (emails and shared folders) into a new hyper-V server so I can split up exchange and my AD and get a fresh start to it all.

I'm wondering if someone who has done this before can share their experience doing this.  I really would appreciate it.  (Or yell at me for even thinking about doing it, this may be the worst idea ever, not really sure yet!)
