Few questions about Windows Server network

We are planning to move from Novell Netware 6.5 to a Windows Server network in the next six months. We are going to start building everything out once we get back from Christmas break. Had a few questions. Here's a little info about our district. We have around 500 teachers, another 350 staff, and around 2500 students. We probably have around 2600 computers/laptops and another 300-500 ipads/ipods/etc. We have 15 sites, all with 100meg/gig burst circuits or better. We are mainly a Cisco hardware, with MDF's being 3750.

How many servers should I need, just for the basics. On my primary domain controller, I'm assuming I can run DNS and DHCP on it. I already have a WSUS server, should I bring it into the domain, or just add it to a new server? I'm looking at doing WDS, should it be on it's on server? Currently we have a server for each school, which has storage for students and teachers, and each of that schools own applications. I also hosts a print server for each site. Could I have one print server for say 500 printers?

Last question, we are still about 95% Windows XP. Should I go with 2012 or 2008 for servers? We are also starting to get some Windows 8 tablets. We are going to start testing out Windows 7 on some of these machines while we're building the servers.
